These little treats are filled with antioxidants, vitamins, protein and fiber.  Pumpkin is chock full of Vitamin A and a half a cup of pumpkin puree is only 40 calories.  They’re perfect for an afternoon pick-me-up or even dessert.  My 7-year-old daughter loves to find them in her lunch box. They are extremely easy to make with no cooking required!




1 ½ cup organic rolled oats
½ cup organic pumpkin puree (not pumpkin pie filling)
¼ cup honey
⅓ cup nut or seed butter (sunflower seed butter, almond butter or peanut butter)
1 scoop Juice Plus Vanilla Complete Protein Shake Mix or another protein powder
2 tsp pumpkin pie spice
½ tsp ground cinnamon plus extra for sprinkling
dark chocolate chips for garnish

In a large bowl, combine the pumpkin puree, honey, nut butter, pumpkin pie spice and cinnamon. Add the rolled oats and Juice Plus Vanilla Complete and mix until well combined.  It’s going to get thick so you might want to use your hands. (You can also do this in a food processor but I personally like to see the whole oats).  Roll into 1-inch balls and top with a dark chocolate chip and sprinkle with a little ground cinnamon. For extra surprise, you can put chocolate chips inside the bites too.  Enjoy.
